The Culinary Alchemist: Chef Ahmad Abu Talib’s Journey to Executive Chef

For Chef Ahmad Abu Talib Abdul Hamid, Executive Chef at Tower Plaza in Dubai, the art of cooking is far more than a profession—it’s a heritage passed down through generations. His journey began not in a culinary school, but at home, with a simple, humble dish.

“My attachment to the kitchen began in my childhood when I watched my father preparing delicious dishes,” he recalls. That first spark ignited when he decided to help his father prepare a simple meal of rice and lentils. “That was an amazing experience!” he says. “I started by chopping vegetables, then learned how to prepare the rice and spices. When it came time to present the dish, I felt great pride in seeing what I had accomplished.” That single moment, filled with the aroma of home cooking and a sense of accomplishment, was the beginning of his love affair with food.

That early passion propelled him to pursue a formal education, leading him to a culinary academy where he mastered a wide range of techniques. For 18 years, Chef Ahmad has honed his skills in some of the world’s most prestigious hotels and restaurants, developing a diverse menu of dishes that reflect multiple cultures. He believes that food is not just a meal, but an experience that combines flavors, colors, and sensations.

A Passion for Innovation and Italian Simplicity

While his roots are in traditional Middle Eastern flavors, Chef Ahmad holds a special place in his heart for Italian cuisine. He is captivated by its ability to combine simplicity with rich flavors, using fresh ingredients to create a sense of community. “Italian food is a social experience, shared among friends and family, adding a beautiful dimension to the cooking experience,” he says. This philosophy of bringing people together through food is a cornerstone of his culinary style.

He is constantly innovating, adding special touches to his restaurant to create a unique experience for his guests. His approach includes crafting an innovative menu, using cultural decor, providing exceptional service, and hosting live cooking events to fully engage his guests.

Overcoming Challenges with a Human Touch

Even at the top of his profession, Chef Ahmad faces challenges, with managing guest expectations during peak seasons being one of the most significant. To overcome this, he implemented a strategy centered on proactive communication and preparation. “We ensured all team members were well-trained to handle high-pressure situations,” he explains. By focusing on clear communication and gathering real-time feedback, he and his team were able to enhance the guest experience even during the busiest times.

His journey is a testament to the power of a strong foundation. For young chefs entering the industry, he offers a clear set of principles:
